This Linguine with Tuna, Capers, Spinach, and Sun-Dried Tomatoes is a weeknight favourite that brings incredible flavours to your table. Inspired by Gennaro Contaldo’s Simple Tuna Pasta, this dish features linguine tossed with sautéed sweet onions and garlic, high-quality tuna in olive oil, fresh spinach, capers, and sun-dried tomatoes. A splash of pasta cooking water helps create a deliciously cohesive sauce. Quick, easy, and packed with taste, it’s a delightful meal you’ll want to make again and again.

Ingredients
  

  • Ingredients:
  • 200 g linguine
  • 1 can high-quality tuna in olive oil
  • 1 tbsp extra virgin olive oil if needed
  • 1 large sweet onion finely chopped
  • 3 cloves garlic minced
  • 2 cups fresh spinach chopped
  • 2 tbsp capers drained
  • 1/2 cup sun-dried tomatoes chopped
  • Salt and pepper to taste
  • 1/4 cup pasta cooking water reserved
  • Optional: Fresh parsley for garnish
  • Instructions:
  • Cook the Linguine:
  • Cook the linguine according to package instructions until al dente. Reserve 1/4 cup of the pasta cooking water and drain the rest. Set aside.
  • Prepare the Sauce:
  • In a large skillet heat a tbsp of extra virgin olive oil (if needed) over medium heat. Add the chopped sweet onion and sauté until translucent, about 5 minutes.
  • Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
  • Add Tuna and Vegetables:
  • Add the entire can of tuna including the olive oil to the skillet. Stir to combine with the onions and garlic.
  • Add the chopped spinach capers, and sun-dried tomatoes. Cook for 2-3 minutes, until the spinach has wilted and the ingredients are well combined.
  • Combine with Pasta:
  • Add the cooked linguine to the skillet tossing to combine with the sauce.
  • Pour in the reserved pasta cooking water stirring to help the sauce coat the pasta evenly.
  • Season and Serve:
  • Season with freshly ground pepper to taste. Serve immediately.

Notes

Sprinkle with fresh Italian parsley, if desired. Enjoy!
