Linguine with Tuna, Capers, Spinach, & Sun-Dried Tomatoes
This Linguine with Tuna, Capers, Spinach, and Sun-Dried Tomatoes is a weeknight favourite that brings incredible flavours to your table. Inspired by Gennaro Contaldo’s Simple Tuna Pasta, this dish features linguine tossed with sautéed sweet onions and garlic, high-quality tuna in olive oil, fresh spinach, capers, and sun-dried tomatoes. A splash of pasta cooking water helps create a deliciously cohesive sauce. Quick, easy, and packed with taste, it’s a delightful meal you’ll want to make again and again.
Ingredients
- Ingredients:
- 200 g linguine
- 1 can high-quality tuna in olive oil
- 1 tbsp extra virgin olive oil if needed
- 1 large sweet onion finely chopped
- 3 cloves garlic minced
- 2 cups fresh spinach chopped
- 2 tbsp capers drained
- 1/2 cup sun-dried tomatoes chopped
- Salt and pepper to taste
- 1/4 cup pasta cooking water reserved
- Optional: Fresh parsley for garnish
- Instructions:
- Cook the Linguine:
- Cook the linguine according to package instructions until al dente. Reserve 1/4 cup of the pasta cooking water and drain the rest. Set aside.
- Prepare the Sauce:
- In a large skillet heat a tbsp of extra virgin olive oil (if needed) over medium heat. Add the chopped sweet onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for an additional 1-2 minutes until fragrant.
- Add Tuna and Vegetables:
- Add the entire can of tuna including the olive oil to the skillet. Stir to combine with the onions and garlic.
- Add the chopped spinach capers, and sun-dried tomatoes. Cook for 2-3 minutes, until the spinach has wilted and the ingredients are well combined.
- Combine with Pasta:
- Add the cooked linguine to the skillet tossing to combine with the sauce.
- Pour in the reserved pasta cooking water stirring to help the sauce coat the pasta evenly.
- Season and Serve:
- Season with freshly ground pepper to taste. Serve immediately.
Notes
Sprinkle with fresh Italian parsley, if desired. Enjoy!
